近日，有關(guān)必勝客餐廳的食品安全問題引發(fā)網(wǎng)友關(guān)注，“記者臥底必勝客后廚”的話題很快成為熱搜。

7月20日，北京兩家必勝客門店因存在為過期食品原材料更換標(biāo)簽、烹炸油長期不更換等問題，被北京市豐臺(tái)區(qū)和海淀區(qū)市場監(jiān)管局依法立案查處。

Two Pizza Hut restaurants in Beijing are being inspected for suspected food safety issues, the market regulation authority said on Wednesday. The stores, in the capital's Haidian and Fengtai districts, are accused of serving expired food, tampering with expiry date labels and repeatedly using old oil to fry food, according to an investigative report from Beijing News.

當(dāng)天，必勝客方面表示，兩店已閉店調(diào)查。

The operation of the stores has been suspended for investigation, Pizza Hut China said on social media platform Sina Weibo on Wednesday.

記者臥底必勝客后廚

據(jù)新京報(bào)報(bào)道稱，自去年以來，新京報(bào)記者接到多名必勝客內(nèi)部員工的爆料，稱其存在諸多食品安全問題。今年6、7月，記者應(yīng)聘進(jìn)入必勝客北京和諧廣場店和魏公村店進(jìn)行調(diào)查。根據(jù)調(diào)查顯示，發(fā)現(xiàn)后廚存在多種食品安全問題。

The Beijing News said its reporters received multiple tip-offs from Pizza Hut employees over its food safety problems since last year. The Beijing News reporters then applied for jobs at the two shops to conduct an undercover investigation from late June to early July. According to the investigation, two Pizza Hut restaurants in Beijing - Hexie Square in Fengtai and Weigongcun in Haidian - had various food safety problems. 

在后廚工作中，記者稱發(fā)現(xiàn)篡改過期食品標(biāo)簽屬于日常操作，而且又是管理層員工實(shí)施，普通員工難以介入。包括牛排、小龍蝦、米飯、面食、檸檬等，都被替換了原有的時(shí)間標(biāo)簽。而在過期后，這些食材依舊被端上餐桌。

While working, the reporters found that tampering with labels on food expiration dates was something that happened daily. As the "secret work" was carried out by the management staff of the restaurant, it was difficult for ordinary employees to intervene in any way. Whether it was steak, crayfish or sausage pizza toppings, rice and noodles for fried rice and pasta, or even tea and lemons for drinks, none of them were discarded at the prescribed time. These ingredients were still served to customers after their expiration date labels were changed.

此外，按照要求必勝客員工應(yīng)該每日使用儀器檢查烹調(diào)油指標(biāo)，數(shù)值異常就要廢棄舊油更換新油。不過，記者稱烹調(diào)油使用近一周，原本清澈的食用油已經(jīng)變黑，近乎油墨色。

In addition, despite the fact that Pizza Hut employees in Beijing's restaurants use a simple oil gauge to check the quality of cooking oil and they are required to check the cooking oil every day and replace it if there is any abnormality, the undercover investigation found the oil was used for cooking in the kitchen for nearly a week, until the originally clear oil turned an almost ink-like color.

而當(dāng)檢測(cè)儀器顯示的數(shù)值超標(biāo)后，餐廳經(jīng)理要求員工將舊油簡單過濾后繼續(xù)使用。足足使用了十天之后，餐廳的管理人員才同意更換新油。

Even when the detected value of the oil was found to be above the limit, the restaurant manager ignored it and asked the staff members to simply filter the oil and use it again. It wasn't until the oil had been used for a full 10 days that the restaurant management would give the order to replace the oil.

兩家門店被立案查處

針對(duì)媒體曝光的問題，20日上午，北京豐臺(tái)區(qū)市場監(jiān)管局和海淀區(qū)市場監(jiān)管局執(zhí)法人員對(duì)所管轄的問題必勝客餐廳進(jìn)行現(xiàn)場檢查。目前，兩家問題必勝客餐廳均被立案調(diào)查并停業(yè)整頓。

據(jù)新華網(wǎng)報(bào)道，北京市豐臺(tái)區(qū)涉事門店為必勝客和諧廣場餐廳，市場監(jiān)管局的執(zhí)法人員現(xiàn)場對(duì)其食品原材料、半成品等食品的保質(zhì)期限、使用和庫存情況，以及從業(yè)人員的生產(chǎn)加工操作過程等進(jìn)行全面檢查。檢查發(fā)現(xiàn)，后廚冷凍庫中存放有保質(zhì)期至7月19日的法式吐司面包片1袋。另外檢查發(fā)現(xiàn)其洗消間臟亂、存有大量待清洗的餐具、地面油膩濕滑，以及食品庫房中存放有非食品和個(gè)人衣物等問題。

豐臺(tái)區(qū)市場監(jiān)管局立即組織第三方檢測(cè)公司對(duì)食用油、雞腿、雞翅、香腸、小龍蝦等食品原材料進(jìn)行現(xiàn)場抽檢，檢測(cè)結(jié)果待出。豐臺(tái)區(qū)市場監(jiān)管局餐飲科副科長宋京介紹，針對(duì)現(xiàn)場檢查情況及相關(guān)問題，豐臺(tái)區(qū)市場監(jiān)管局依法進(jìn)行立案查處，目前案件正在調(diào)查過程中，涉事門店已停業(yè)整頓。

Officers from the market regulation bureau in Fengtai carried out on-site inspection on Wednesday, examining the expiry dates of raw and semi-cooked materials, storage and operating practices. It found a bag of bread that expired on Tuesday in the kitchen. Other food safety issues were also found such as a dirty cleaning and disinfection room with unwashed dishes, and the storing of personal clothes in the food storage room. The market supervision bureau has organized a third-party testing company to conduct spot tests on cooking oil, sausage, crayfish and other ingredients. The bureau filed a case accordingly and shut down the store.

值得注意的是，根據(jù)新京報(bào)記者的報(bào)道，該餐廳曾于今年3月因食材超保質(zhì)期被豐臺(tái)區(qū)市場監(jiān)督管理局處以沒收違法所得、罰款5萬元的處罰。

The restaurant's illegal gains were confiscated and it was fined 50,000 yuan in March by the district's market supervision administration for using expired food.

20日當(dāng)天，北京市海淀區(qū)市場監(jiān)管局第一時(shí)間對(duì)涉事門店必勝客魏公村餐廳營運(yùn)在線系統(tǒng)進(jìn)行了檢查。海淀區(qū)市場監(jiān)管局已現(xiàn)場委托第三方機(jī)構(gòu)對(duì)后廚發(fā)現(xiàn)的原材料進(jìn)行檢測(cè)，現(xiàn)場聯(lián)合公安部門對(duì)該涉事門店內(nèi)部后廚視頻證據(jù)進(jìn)行固化，同時(shí)對(duì)涉及的員工進(jìn)行問詢，目前案件正在調(diào)查中，涉事門店已停業(yè)整頓。

The market regulation bureau in Haidian district also carried out an inspection of a store in the district, checking its operating practices and time log of cold-chain food entering and leaving the storage room, and also entrusted a third party to test the raw materials. 當(dāng)天，海淀區(qū)市場監(jiān)管局部署對(duì)轄區(qū)內(nèi)45家必勝客門店同步進(jìn)行全覆蓋檢查，后續(xù)將對(duì)檢查中發(fā)現(xiàn)的問題嚴(yán)格依法依規(guī)進(jìn)行處理。

 

據(jù)新京報(bào)報(bào)道，從1990年在北京開出中國第一家餐廳以來，截至2022年3月底，必勝客在中國大陸600多個(gè)城市開設(shè)了2600多家餐廳，它與肯德基、小肥羊等餐飲品牌，都隸屬于百勝中國控股有限公司。百勝中國在官網(wǎng)上宣稱“食品安全和質(zhì)量是百勝中國頭等重要的大事”。
