憑借著在小吃屆和餐飲界的國民度，沙縣小吃這次也跟著又火了一把！其中，風(fēng)行全國的拌面、餛飩、蒸餃和燉罐可以說是100多種“沙縣小吃”中的“四大金剛”。
據(jù)央視新聞報道，如今，沙縣小吃在全國和世界上其他62個國家和地區(qū)的門店已經(jīng)超過8.8萬家，年營業(yè)額超500億元。
那么，原本只是一個攤口的“沙縣小吃”又是如何崛起的呢？
Hailing from Shaxian, a county in east China's Fujian Province, popular restaurant chain Shaxian Snacks is renowned for its pork wontons, peanut sauce noodles, and over 100 other local-flavor delicacies. Starting with a single booth in a street market, the chain now has more than 88,000 chain stores in China and 62 other countries and regions, pulling in a hefty revenue exceeding 50 billion yuan ($7.6 billion).
上世紀(jì)90年代初，沙縣俞邦村老支書俞廣清作為致富帶頭人，在福州開了一家沙縣小吃。“最開始，沙縣小吃的種類很少，只有扁肉和拌面等幾樣，我們的經(jīng)營思路是讓食客‘一元進(jìn)店、兩元吃飽，五元吃好’。”

食客們吃得飽，花得少，好吃不貴的沙縣小吃受到了市場的歡迎。
In 1992, the first Shaxian Delicacies opened in a market, targeting the area's low- income labor force. Its owner, Yu Guangqing, had been the secretary of the Communist Party of China (CPC) branch of a small rural village in Shaxian City. He decided to lead the villagers to a more promising future than farming on the poor mountainous fields. “Our selling points were 'one yuan for a meal, two yuan for a full stomach'. Our target customers were satisfied at cheap, large meal we provided back at that time," Yu said.
據(jù)這也引發(fā)了極強(qiáng)的示范效應(yīng)，一傳十、十傳百，沙縣人紛紛都外出開小吃店。但據(jù)CGTN報道，很快問題也接踵而至，出現(xiàn)了一些缺乏食品安全管理標(biāo)準(zhǔn)的冒牌小吃店。據(jù)新華社報道，1997年，沙縣政府多次召開小吃產(chǎn)業(yè)發(fā)展專題會議，將小吃定位為支柱性第三產(chǎn)業(yè)，成立沙縣小吃業(yè)發(fā)展領(lǐng)導(dǎo)小組，還成立沙縣小吃同業(yè)公會，作為沙縣小吃行業(yè)管理的社團(tuán)組織。
自此，沙縣小吃由當(dāng)?shù)厝俗园l(fā)創(chuàng)業(yè)的個體經(jīng)營，逐漸演變成有沙縣政府引導(dǎo)的產(chǎn)業(yè)。
Tens of thousands of Shaxian delicacy shops opened in the first few years, encouraged by his success. But soon the company faced such troubles as others illegally used their brand name and their lack of standard food safety control. The local government established the Shaxian Snack Bureau in 1997, which is the first and perhaps only one of its kind in China focusing on local snacks.
據(jù)央視新聞報道，2016年，沙縣小吃開始實行標(biāo)準(zhǔn)化生產(chǎn)，將現(xiàn)代食品加工工藝與傳統(tǒng)小吃制作工藝有機(jī)結(jié)合。“中央廚房”批量生產(chǎn)前請沙縣小吃業(yè)主代表品嘗，既保證了獨特風(fēng)味，又確保了食品標(biāo)準(zhǔn)化、安全化，小吃業(yè)主的經(jīng)營成本不斷降低。
The bureau initiated an upgrade of the Shaxian Snacks industry in 2016 to keep pace with the fast-changing market. Their next steps were to unify, standardize, and modernize operations at the restaurants to turn the brand into a successful and safe food business worldwide.
如今，沙縣小吃不僅成為當(dāng)?shù)氐闹еa(chǎn)業(yè)，還遍布美國、德國、葡萄牙等全球62個國家和地區(qū)。 紐約第一家店開業(yè)當(dāng)天僅3小時，商品全部售罄；而東京第一家店的營業(yè)額在5小時內(nèi)便將近2000美元（約13098元）。

The Shaxian Snack stores entered 62 countries and regions including the U.S., Germany, and Portugal. The first store in New York sold out in three hours, and sales revenue of the first store in Tokyo reached nearly $2,000 in 5 hours.
